Zesty Carrot Dressing is a vibrant and flavorful salad made with thinly shaved carrots tossed in a tangy, slightly spicy dressing.   • A splash of lime or lemon juice
  • 4 carrots, peeled into ribbons
  • 1 teaspoon chili flakes
  • 1 tablespoon soy sauce
  • 2.5 tablespoons olive oil
  • Salt, as much as you like
  • 12 teaspoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • Sesame seeds to sprinkle on top

Instructions

  1. Grab a peeler or grater and shave the carrots into thin strips. Put the strips in your biggest mixing bowl.
  2. In a small bowl, stir together soy sauce, rice vinegar, lemon or lime juice, chili flakes, honey, and some salt.
  3. Pour the sauce over the shaved carrots. Toss it until everything’s evenly coated, and tweak the flavors if you need to.
  4. Lay the salad out on a serving dish, then sprinkle on sesame seeds and chili flakes (only if you want extra heat). This works as a snack or a light side.
