To make these delicious Thin Mint Crackers, you’ll need:
- Chocolate Coating:
- 1 pound semisweet chocolate, broken into small pieces
- ½ teaspoon peppermint extract
- Base:
- 80 buttery round crackers (such as Ritz®)
Instructions
- Melt the Chocolate:
- Place chocolate pieces in the top of a double boiler over simmering water.
- Stir frequently, scraping the sides with a rubber spatula, until fully melted (15 to 20 minutes). Ensure no water gets into the chocolate.
- Prepare Baking Sheets:
- While chocolate is melting, line two baking sheets with parchment paper and place them in the freezer to chill.
- Add Peppermint Flavor:
- Remove the melted chocolate from heat and stir in peppermint extract.
- Dip the Crackers:
- Fully dip each Ritz cracker into the melted chocolate, coating both sides.
- Place coated crackers on the cold baking sheets.
- Set the Chocolate:
- Refrigerate the baking sheets until the chocolate sets (about 5 minutes).
