  • Total Time: 40 minutes

Ingredients

Scale

To make these delicious Thin Mint Crackers, you’ll need:

  • Chocolate Coating:

    • 1 pound semisweet chocolate, broken into small pieces
    • ½ teaspoon peppermint extract

  • Base:

    • 80 buttery round crackers (such as Ritz®)

Instructions

  1. Melt the Chocolate:

    • Place chocolate pieces in the top of a double boiler over simmering water.
    • Stir frequently, scraping the sides with a rubber spatula, until fully melted (15 to 20 minutes). Ensure no water gets into the chocolate.

  2. Prepare Baking Sheets:

    • While chocolate is melting, line two baking sheets with parchment paper and place them in the freezer to chill.

  3. Add Peppermint Flavor:

    • Remove the melted chocolate from heat and stir in peppermint extract.

  4. Dip the Crackers:

    • Fully dip each Ritz cracker into the melted chocolate, coating both sides.
    • Place coated crackers on the cold baking sheets.

  5. Set the Chocolate:

    • Refrigerate the baking sheets until the chocolate sets (about 5 minutes).

  6. Store or Serve:

    • Package in candy cups for gifts or store at room temperature in an airtight container.
