- 3 pounds small red new potatoes, halved
- ¼ cup olive oil
- 1 teaspoon salt
- Freshly ground black pepper, to taste
Instructions
- Preheat oven to 400°F (200°C) and adjust the oven rack to the lowest position.
- In a large bowl, toss halved red potatoes with olive oil, salt, and pepper.
- Arrange potatoes cut-side down on a rimmed cookie sheet or jellyroll pan.
- Roast in the preheated oven for 20 to 30 minutes, or until tender and golden brown.
- Transfer to a serving dish. Serve immediately and enjoy!
