Here’s what you need to make this flavorful roasted cabbage dinner:

  • 1 tablespoon olive oil for roasting and flavor
  • 1 large green cabbage for the base
  • 2 tablespoons whole grain mustard, spicy for a tangy kick
  • 1/2 pound corned beef deli slices for a hearty, meaty touch
  • 4 ounces Dubliner cheese, shredded for a creamy, cheesy topping
  • 1/4 cup chopped scallions for a fresh, vibrant finish
  • Salt and pepper, to taste to season the cabbage

Instructions

  1. Preheat the oven to 450°F and line a large rimmed baking sheet with parchment paper.
  2. Hold the root end of the cabbage and slice it into six 3/4-inch rounds. Arrange the cabbage rounds on the baking sheet and brush with olive oil. Season generously with salt and pepper.
  3. Roast the cabbage steaks for 15-20 minutes, or until crispy around the edges.
  4. While the cabbage is roasting, shred the Dubliner cheese, chop the scallions, and slice the deli corned beef into 1/2-inch ribbons.
  5. Once the cabbage is roasted, brush 1 teaspoon of mustard over each steak. Top with corned beef and shredded cheese, then return to the oven for 5 minutes to heat the beef and melt the cheese.
