2 cups all-purpose flour
1/2 cup granulated sugar (for the crust)
1/2 cup unsalted butter, softened
1 can (20 oz) crushed pineapple, well-drained
1 cup sour cream
1/4 cup granulated sugar (for the filling)
2 large eggs
1 teaspoon vanilla extract
Powdered sugar for dusting

Instructions

Preheat your oven to 350°F (175°C).
In a mixing bowl, combine the all-purpose flour and 1/2 cup of granulated sugar. Cut in the softened butter until the mixture resembles coarse crumbs.
Press this delightful mixture into a greased 9×13 inch baking dish. Bake for 15 minutes or until golden brown.
While the crust is baking, take a separate bowl and blend the crushed pineapple, sour cream, 1/4 cup of granulated sugar, eggs, and vanilla extract. Stir until well combined and smooth.
Once the crust is finished baking, pour the creamy filling over the warm crust. Return it to the oven and bake for an additional 25-30 minutes until the filling is beautifully set.
Allow the bars to cool completely, then dust them lightly with powdered sugar before cutting into squares.
