Cereal Base:
- ¼ cup butter
- 4 cups mini marshmallows
- 4 cups Lucky Charms cereal
Cheesecake:
- 16 ounces cream cheese, room temperature
- 2 teaspoons lemon juice
- 2 cups heavy whipping cream
- ⅓ cup granulated sugar
- Green food coloring, to taste
Toppings:
- Lucky Charms cereal marshmallows
- Sprinkles
Instructions
- Prepare the Base: Line a 9×9-inch square pan with parchment paper. In a large saucepan over low heat, melt the butter. Add mini marshmallows and stir until completely melted and blended. Cook for two minutes, stirring constantly, then remove from heat. Add Lucky Charms cereal and stir until well coated.
- Set the Base: Pour the mixture into the prepared pan and spread evenly, packing it firmly with a spatula or hands. Let the base cool completely.
- Make the Cheesecake Layer: In a mixing bowl, beat together the softened cream cheese and lemon juice until smooth. Using an electric mixer, beat in the heavy whipping cream until thick. Add sugar and continue beating until stiff peaks form. Add green food coloring to achieve the desired color.
- Assemble and Freeze: Pour the cheesecake mixture over the cooled cereal base and spread evenly. Freeze for at least 4 hours or ideally overnight.
- Add Toppings: Just before serving, separate the marshmallows from the remaining Lucky Charms cereal and sprinkle them on top, along with any additional sprinkles. Cut into squares and serve chilled.
