Mexican Street Corn Salad

This Mexican Street Corn Salad combines sweet, tender corn with creamy mayonnaise, tangy lime, and savory cotija cheese, inspired by the flavors of traditional Mexican elotes (grilled corn on the cob). It’s a quick and easy dish that’s perfect for summer barbecues, Cinco de Mayo celebrations, or as a side for any meal. The addition of chili powder gives it a mild spice, making it a perfect balance of sweet, creamy, and tangy.
