In a large bowl, combine the mashed potatoes, beaten eggs, cheddar cheese, and chopped chives. Don’t forget to season with pepper to taste.
Now, take a spoon and scoop a generous heaping spoonful of the potato mixture into each cup of the muffin pan.
To make it even more scrumptious, top each muffin with a sprinkle of shredded Parmesan cheese.
