  • 16 ounces marshmallows (jumbo or mini) for gooey texture
  • 7 cups Rice Krispies for the crispy base
  • 2 tablespoons unsalted butter to melt with marshmallows
  • Easter egg candies for decoration
  • ½ cup unsalted butter for the frosting
  • 34 cups powdered sugar for sweetness
  • ¼ cup milk to smooth out the frosting
  • 1 teaspoon vanilla extract for flavor
  • Green food coloring to mimic grass

Instructions

  1. Thoroughly grease a standard cupcake pan using cooking spray or butter. Make sure the corners are well coated to prevent sticking.
  2. In a microwave-safe bowl, combine the marshmallows and 2 tablespoons of unsalted butter. Microwave in 30-second intervals, stirring between each round, until the mixture is smooth and fully melted.
  3. Quickly mix the melted marshmallow mixture into the Rice Krispies. Use a buttered spatula to coat all the cereal evenly.
  4. Spoon the mixture into the greased cupcake pan cavities. Gently press into the center of each cavity to create a hollow nest shape. Use wax paper or greased hands to prevent sticking.
  5. Let the nests rest at room temperature for about 30 minutes to set.
  6. In a large mixing bowl, cream ½ cup butter until smooth. Gradually add 2 cups of powdered sugar, ¼ cup milk, and 1 teaspoon vanilla extract. Beat for 5 minutes until creamy. Add the remaining powdered sugar and green food coloring to achieve the desired shade and consistency.
  7. Transfer the frosting to a piping bag fitted with a grass tip. Pipe the frosting into the centers of the cooled nests, moving from the outer edge inward. Top each nest with 2-3 Easter egg candies.
