  • 4 large lemons
  • 2 cups granulated sugar
  • 1 cup water
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Wash and dry the lemons. Zest the lemons, then juice them, discarding the seeds.
  2. In a pot, combine the lemon juice, zest, sugar, and water. Stir until the sugar dissolves.
  3. Bring the mixture to a boil over medium heat. Reduce heat and simmer for about 30-40 minutes, stirring occasionally, until it thickens.
  4. To check if it’s ready, place a small amount on a cold plate. If it gels, it’s done. If not, continue cooking for a few more minutes.
  5. Remove from heat and let it cool slightly before pouring into sterilized jars. Seal tightly and let cool completely.
