To make this classic Irish dessert, you’ll need:
- 1 cup white sugar
- ½ cup butter, softened
- 2 large eggs
- 1 ½ teaspoons vanilla extract
- 1 ¾ cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup milk (or more if needed)
- ¼ cup confectioners’ sugar for dusting
Instructions
Step 1: Preheat & Prepare the Pan
- Preheat oven to 350°F (175°C).
- Grease and flour a 9-inch round pan to prevent sticking.
Step 2: Make the Batter
- In a mixing bowl, cream sugar and butter together with an electric mixer until light and fluffy.
- Beat in eggs, one at a time, mixing well after each addition.
- Stir in vanilla extract.
Step 3: Combine Dry & Wet Ingredients
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients into the wet mixture, alternating with milk.
- If the batter is too stiff, add 1 to 2 tablespoons more milk.
- Spread batter evenly into the prepared cake pan.
Step 4: Bake & Cool
- Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
- Cool the cake in the pan on a wire rack for 10 minutes.
- Turn the cake out onto a serving plate and allow it to cool to room temperature (20-30 minutes).
- Dust with confectioners’ sugar just before serving.
