To make this classic Irish dessert, you’ll need:

  • 1 cup white sugar
  • ½ cup butter, softened
  • 2 large eggs
  • 1 ½ teaspoons vanilla extract
  • 1 ¾ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup milk (or more if needed)
  • ¼ cup confectioners’ sugar for dusting

Instructions

Step 1: Preheat & Prepare the Pan

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour a 9-inch round pan to prevent sticking.

Step 2: Make the Batter

  1. In a mixing bowl, cream sugar and butter together with an electric mixer until light and fluffy.
  2. Beat in eggs, one at a time, mixing well after each addition.
  3. Stir in vanilla extract.

Step 3: Combine Dry & Wet Ingredients

  1. In a separate bowl, whisk together flour, baking powder, and salt.
  2. Gradually add the dry ingredients into the wet mixture, alternating with milk.
  3. If the batter is too stiff, add 1 to 2 tablespoons more milk.
  4. Spread batter evenly into the prepared cake pan.

Step 4: Bake & Cool

  1. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  2. Cool the cake in the pan on a wire rack for 10 minutes.
  3. Turn the cake out onto a serving plate and allow it to cool to room temperature (20-30 minutes).
  4. Dust with confectioners’ sugar just before serving.
