To make these savory and refreshing tacos, you’ll need:

  • For the Sauce:

    • 2 cups plain yogurt
    • ½ cup mayonnaise
    • 1 lime, juiced
    • 2 tablespoons chopped fresh cilantro
    • 1 pinch cayenne pepper, or to taste
    • Salt, to taste

  • For the Tacos:

    • 1 ½ cups shredded corned beef
    • 8 (10-inch) flour tortillas
    • 1 pound prepared coleslaw

Instructions

Make the Yogurt Sauce:

  1. In a bowl, mix together yogurt, mayonnaise, lime juice, cilantro, cayenne pepper, and salt until smooth.
  2. Set aside while preparing the rest of the ingredients.

Heat the Corned Beef:

  1. Place shredded corned beef in a saucepan over medium-low heat.
  2. Stir occasionally until the meat is heated through.

Warm the Tortillas:

  1. While the corned beef is warming, heat a heavy skillet over medium heat.
  2. Place a flour tortilla in the skillet, cooking for about 30 seconds per side, until warm and lightly browned.
  3. Repeat with remaining tortillas.

Assemble the Tacos:

  1. Lay out warm tortillas and add about 2 tablespoons of coleslaw to the center of each one.
  2. Top with 3 tablespoons of corned beef.
  3. Drizzle 2 tablespoons of yogurt sauce over each taco.
  4. Roll up and serve immediately.
