Honey-Rhubarb Syrup
- 1 2/3 cups chopped fresh rhubarb
- 2/3 cup honey
- 2/3 cup water
- 1 tablespoon grated fresh ginger
Green Tea Punch
- 2 cups water
- 4 bags green tea or 2 tablespoons loose green tea
- 1 bunch fresh mint (about 1 cup), plus more for garnish
- 2 cups vodka
- 1 cup fresh lime juice (from about 8 limes)
- 2 cups chilled club soda
- Ice, as needed
- Rhubarb stalks, for garnish
Instructions
Step 1: Make the Honey-Rhubarb Syrup
- In a small saucepan, combine rhubarb, honey, water, and ginger.
- Bring to a boil, then reduce heat and simmer, covered, for 15 minutes.
- Remove from heat and allow the syrup to cool completely for about 1 hour.
- Strain through a fine-mesh sieve into an airtight container or jar.
- Discard the solids and refrigerate syrup for up to 1 week.
Step 2: Brew the Green Tea
- Bring 2 cups of water to a boil in a medium saucepan.
- Remove from heat and add tea bags or loose tea.
- Cover and steep for 5 minutes.
- Remove tea bags or strain to remove loose tea leaves.
- Allow the tea to cool completely for about 1 hour.
Step 3: Assemble the Punch
- In a large pitcher, muddle fresh mint to release its essential oils.
- Add the cooled green tea, vodka, honey-rhubarb syrup, and fresh lime juice.
- Stir to combine and chill for at least 30 minutes or up to 12 hours for more developed flavors.
Step 4: Serve and Enjoy
- Right before serving, add club soda to the pitcher and stir gently.
- Pour over ice-filled glasses and garnish with fresh mint and rhubarb stalks.
- Serve immediately and enjoy!
