Honey-Rhubarb Syrup

  • 1 2/3 cups chopped fresh rhubarb
  • 2/3 cup honey
  • 2/3 cup water
  • 1 tablespoon grated fresh ginger

Green Tea Punch

  • 2 cups water
  • 4 bags green tea or 2 tablespoons loose green tea
  • 1 bunch fresh mint (about 1 cup), plus more for garnish
  • 2 cups vodka
  • 1 cup fresh lime juice (from about 8 limes)
  • 2 cups chilled club soda
  • Ice, as needed
  • Rhubarb stalks, for garnish

Instructions

Step 1: Make the Honey-Rhubarb Syrup

  1. In a small saucepan, combine rhubarb, honey, water, and ginger.
  2. Bring to a boil, then reduce heat and simmer, covered, for 15 minutes.
  3. Remove from heat and allow the syrup to cool completely for about 1 hour.
  4. Strain through a fine-mesh sieve into an airtight container or jar.
  5. Discard the solids and refrigerate syrup for up to 1 week.

Step 2: Brew the Green Tea

  1. Bring 2 cups of water to a boil in a medium saucepan.
  2. Remove from heat and add tea bags or loose tea.
  3. Cover and steep for 5 minutes.
  4. Remove tea bags or strain to remove loose tea leaves.
  5. Allow the tea to cool completely for about 1 hour.

Step 3: Assemble the Punch

  1. In a large pitcher, muddle fresh mint to release its essential oils.
  2. Add the cooled green tea, vodka, honey-rhubarb syrup, and fresh lime juice.
  3. Stir to combine and chill for at least 30 minutes or up to 12 hours for more developed flavors.

Step 4: Serve and Enjoy

  1. Right before serving, add club soda to the pitcher and stir gently.
  2. Pour over ice-filled glasses and garnish with fresh mint and rhubarb stalks.
  3. Serve immediately and enjoy!
