Chicken

  • 2 large chicken breasts, boneless and skinless
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Salad

  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 1/2 English cucumber, sliced into half moons
  • 1/2 cup Kalamata olives, pitted

For Serving

  • 1/2 cup Greek salad dressing
  • 2 cups Tzatziki
  • 1/2 cup feta cheese, crumbled

Instructions

  1. Heat olive oil in a grill pan over medium-high heat. Season chicken with oregano, salt, and pepper.
  2. Grill chicken for 5–7 minutes per side, or until internal temperature reaches 165°F (74°C). Let rest for a few minutes, then slice into strips.
  3. In a large bowl, combine romaine lettuce, cherry tomatoes, red onion, cucumber, and Kalamata olives. Toss with Greek dressing.
  4. Top the dressed salad with grilled chicken strips.
  5. Add generous dollops of tzatziki and sprinkle with crumbled feta cheese.
  6. Serve immediately or portion into containers for meal prep.
