Chicken
- 2 large chicken breasts, boneless and skinless
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Salad
- 4 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 small red onion, thinly sliced
- 1/2 English cucumber, sliced into half moons
- 1/2 cup Kalamata olives, pitted
For Serving
- 1/2 cup Greek salad dressing
- 2 cups Tzatziki
- 1/2 cup feta cheese, crumbled
Instructions
- Heat olive oil in a grill pan over medium-high heat. Season chicken with oregano, salt, and pepper.
- Grill chicken for 5–7 minutes per side, or until internal temperature reaches 165°F (74°C). Let rest for a few minutes, then slice into strips.
- In a large bowl, combine romaine lettuce, cherry tomatoes, red onion, cucumber, and Kalamata olives. Toss with Greek dressing.
- Top the dressed salad with grilled chicken strips.
- Add generous dollops of tzatziki and sprinkle with crumbled feta cheese.
- Serve immediately or portion into containers for meal prep.
