- ½ (18-ounce) package vanilla sandwich cookies (such as Oreo Golden Original Sandwich Cookies®)
- 4 (3-ounce) packages cream cheese, softened
- 2 tablespoons pumpkin puree
- ½ teaspoon pumpkin spice
- ⅛ teaspoon salt
- 1 (12-ounce) package white chocolate chips
- Optional toppings: melted dark chocolate, melted caramel, pumpkin pie spice, candy eyes
Instructions
- Prepare the Cookie Mixture: Pulse vanilla sandwich cookies in a food processor until finely ground.
- Mix the Dough: Add cream cheese, pumpkin puree, pumpkin spice, and salt to the food processor. Pulse until a smooth, loose dough forms.
- Portion & Shape: Scoop about 1 tablespoon of dough per truffle onto a parchment-lined baking sheet (about 20 truffles total). Freeze for 10-12 minutes until slightly firm.
- Roll into Balls: Once firm, roll each portion into a ball. Return to the freezer for another 8-10 minutes.
- Melt the Chocolate: In a microwave-safe bowl, melt white chocolate chips in 30-second intervals, stirring in between until smooth.
- Coat the Truffles: Using two forks, dip each truffle into the melted white chocolate, coat evenly, and place it back onto the parchment-lined sheet.
- Cool & Decorate: Let the truffles cool to room temperature before adding drizzles of dark chocolate, caramel, or a dusting of pumpkin pie spice.
- Chill & Serve: Keep refrigerated until ready to serve.
