Easy Pumpkin Spice Truffles are the ultimate no-bake fall treat!  These rich, creamy truffles combine the warm flavors of pumpkin spice with smooth white chocolate for an irresistible bite-sized dessert.   • ½ (18-ounce) package vanilla sandwich cookies (such as Oreo Golden Original Sandwich Cookies®)
  • 4 (3-ounce) packages cream cheese, softened
  • 2 tablespoons pumpkin puree
  • ½ teaspoon pumpkin spice
  • ⅛ teaspoon salt
  • 1 (12-ounce) package white chocolate chips
  • Optional toppings: melted dark chocolate, melted caramel, pumpkin pie spice, candy eyes

Instructions

  1. Prepare the Cookie Mixture: Pulse vanilla sandwich cookies in a food processor until finely ground.
  2. Mix the Dough: Add cream cheese, pumpkin puree, pumpkin spice, and salt to the food processor. Pulse until a smooth, loose dough forms.
  3. Portion & Shape: Scoop about 1 tablespoon of dough per truffle onto a parchment-lined baking sheet (about 20 truffles total). Freeze for 10-12 minutes until slightly firm.
  4. Roll into Balls: Once firm, roll each portion into a ball. Return to the freezer for another 8-10 minutes.
  5. Melt the Chocolate: In a microwave-safe bowl, melt white chocolate chips in 30-second intervals, stirring in between until smooth.
  6. Coat the Truffles: Using two forks, dip each truffle into the melted white chocolate, coat evenly, and place it back onto the parchment-lined sheet.
  7. Cool & Decorate: Let the truffles cool to room temperature before adding drizzles of dark chocolate, caramel, or a dusting of pumpkin pie spice.
  8. Chill & Serve: Keep refrigerated until ready to serve.
