Instructions

  1. Blend the Base
    Mix pistachio paste with a bit of cream until smooth. Add mascarpone, vanilla, almond extract, and salt. Beat until creamy.
  2. Whip the Cream
    In another bowl, whip the remaining cream with sugar until stiff peaks form.
  3. Fold and Finish the Cream
    Gently fold the whipped cream into the pistachio-mascarpone mix. Set aside.
  4. Make the Coffee Soak
    Combine coffee, amaretto (if using), and pistachio flavoring in a shallow dish.
  5. Layer 1
    Quickly dip ladyfingers in coffee and arrange in a 9×9-inch pan. Top with half of the cream mixture.
  6. Layer 2
    Repeat with another layer of dipped ladyfingers and spread remaining cream on top.
  7. Garnish and Chill
    Drizzle thinned pistachio paste on top and sprinkle with chopped pistachios. Chill for at least 2 hours (or overnight for best results).
