Base:
- 3/4 cup unsalted butter, melted
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 3/4 cup creamy peanut butter
- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour
Frosting:
- 1/2 cup unsalted butter, softened
- 1 7-ounce container marshmallow fluff
- 2 cups powdered sugar
- 1/2 cup chopped peanuts
Instructions
- Preheat the oven to 175°C (350°F). Grease a 9×13-inch pan with nonstick cooking spray and set aside.
- In a large bowl, mix the melted butter, brown sugar, and granulated sugar using a hand mixer until blended. Add eggs and vanilla extract and mix until fully incorporated. Then mix in the peanut butter until smooth.
- In a separate bowl, whisk together the salt and flour. Slowly add the dry mixture to the wet mixture and mix until just combined.
- Spread the batter evenly into the prepared pan. Bake for 25–30 minutes, or until golden and a toothpick inserted in the center comes out clean. Let the bars cool completely after removing them from the oven.
- In a large bowl, beat the softened butter and marshmallow fluff together. Gradually add powdered sugar, one cup at a time, until blended and smooth.
- Spread the frosting evenly over the cooled bars and sprinkle chopped peanuts on top. Cut into portions and serve.
