Chicken
- 4 large chicken breasts
- 2 sleeves Ritz crackers
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 120 ml milk
- 360 g cheddar cheese, grated
- 1 teaspoon dried parsley
Sauce
- 1 can (285 g) cream of chicken soup
- 2 tablespoons sour cream
- 2 tablespoons butter
Instructions
- Preheat the oven to 200°C (400°F). Spray a 9×13-inch baking dish with nonstick cooking spray.
- Cut each chicken breast into 3 large chunks.
- Use a food processor to grind Ritz crackers into fine crumbs. Transfer to a shallow dish and mix in salt and pepper.
- Place milk, grated cheddar cheese, and the seasoned cracker crumbs into three separate shallow dishes.
- Dip each piece of chicken in milk, then cheese (pressing cheese to help it stick), then cracker crumbs (pressing firmly to coat).
- Arrange coated chicken pieces in the prepared baking dish. Sprinkle dried parsley evenly over the top.
- Cover the dish with aluminum foil and bake for 35 minutes. Remove foil and bake for an additional 10 minutes until edges are golden and crispy.
- Meanwhile, in a saucepan over medium-high heat, whisk together cream of chicken soup, sour cream, and butter until hot and well combined.
- Serve the crispy chicken with the hot sauce drizzled on top or on the side.
