To make these layered brownies, you’ll need:
- Brownie Base:
- 1 cup white sugar
- ½ cup butter, softened
- 4 eggs
- 1 ½ cups chocolate syrup
- 1 cup all-purpose flour
- Mint Cream Layer:
- 2 cups confectioners’ sugar
- ½ cup butter, softened
- 2 tablespoons creme de menthe liqueur
- Chocolate Topping:
- 6 tablespoons butter
- 1 cup semisweet chocolate chips
Instructions
- Preheat & Prep Pan: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Make the Brownie Base:
- In a large bowl, cream together 1 cup sugar and ½ cup softened butter until smooth.
- Beat in eggs one at a time, then stir in chocolate syrup.
- Stir in flour until just blended, then spread the batter evenly into the prepared pan.
- Bake & Cool:
- Bake for 25 to 30 minutes, or until the top springs back when lightly touched.
- Cool completely in the pan before adding the next layers.
- Prepare the Mint Cream Layer:
- In a small bowl, beat together confectioners’ sugar, ½ cup butter, and creme de menthe liqueur until smooth.
- Spread evenly over the cooled brownies and chill until set.
- Make the Chocolate Topping:
- In a small bowl over simmering water or in the microwave, melt 6 tablespoons butter and chocolate chips, stirring occasionally until smooth.
- Allow to cool slightly, then spread over the mint layer.
- Cover and chill for at least 1 hour before cutting into squares.
