These Chocolate Mint Cookies are a rich, melt-in-your-mouth treat featuring a soft chocolate cookie base topped with a smooth chocolate mint frosting. To create these decadent cookies, you will need:

  • Wet Ingredients:
    • ¾ cup butter
    • 1 ½ cups packed brown sugar
    • 2 tablespoons water
    • 2 eggs
  • Chocolate:
    • 2 cups semisweet chocolate chips
    • 36 chocolate mint wafer candies
  • Dry Ingredients:
    • 2 ½ cups all-purpose flour
    • 1 ¼ teaspoons baking soda
    • ½ teaspoon salt

Instructions

  1. Melt the Butter & Chocolate:
    • In a large pan over low heat, melt butter, brown sugar, and water.
    • Add chocolate chips and stir until partially melted. Remove from heat and continue stirring until smooth.
    • Pour mixture into a large bowl and let it cool for 10 minutes.
  2. Mix the Dough:
    • Beat in eggs one at a time at high speed until well incorporated.
    • Reduce speed to low and add flour, baking soda, and salt.
    • Mix until fully combined, then chill the dough for 1 hour.
  3. Preheat Oven & Shape Cookies:
    • Preheat oven to 350°F (175°C).
    • Roll dough into balls and place 2 inches apart on an ungreased cookie sheet.
  4. Bake & Add Mint Topping:
    • Bake for 8-10 minutes until cookies are set.
    • While baking, unwrap and cut mint wafers in half.
    • Immediately after removing cookies from the oven, place ½ a mint wafer on top of each cookie.
    • Let sit for 5 minutes until melted, then spread the mint over the top of each cookie.
  5. Cool & Enjoy:
    • Let cookies cool slightly before serving. Enjoy warm or store for later
