To create these decadent cookies, you will need:
- Wet Ingredients:
- ¾ cup butter
- 1 ½ cups packed brown sugar
- 2 tablespoons water
- 2 eggs
- Chocolate:
- 2 cups semisweet chocolate chips
- 36 chocolate mint wafer candies
- Dry Ingredients:
- 2 ½ cups all-purpose flour
- 1 ¼ teaspoons baking soda
- ½ teaspoon salt
Instructions
- Melt the Butter & Chocolate:
- In a large pan over low heat, melt butter, brown sugar, and water.
- Add chocolate chips and stir until partially melted. Remove from heat and continue stirring until smooth.
- Pour mixture into a large bowl and let it cool for 10 minutes.
- Mix the Dough:
- Beat in eggs one at a time at high speed until well incorporated.
- Reduce speed to low and add flour, baking soda, and salt.
- Mix until fully combined, then chill the dough for 1 hour.
- Preheat Oven & Shape Cookies:
- Preheat oven to 350°F (175°C).
- Roll dough into balls and place 2 inches apart on an ungreased cookie sheet.
- Bake & Add Mint Topping:
- Bake for 8-10 minutes until cookies are set.
- While baking, unwrap and cut mint wafers in half.
- Immediately after removing cookies from the oven, place ½ a mint wafer on top of each cookie.
- Let sit for 5 minutes until melted, then spread the mint over the top of each cookie.
- Cool & Enjoy:
- Let cookies cool slightly before serving. Enjoy warm or store for later
