Cheeseburger Salad

This Cheeseburger Salad combines all the bold, satisfying flavors of a classic cheeseburger—ground beef, melty cheese, pickles, and Thousand Island dressing—served over a crisp bed of lettuce instead of a bun. It’s a hearty, low-carb meal that’s easy to assemble, customizable, and perfect for lunch or dinner any day of the week.

  • Total Time: 25 minutes

Ingredients

Scale

1 1/2 pounds very lean ground beef (browned and drained)
6 cups chopped iceberg lettuce
1 1/2 cups shredded Colby jack cheese
1 cup diced Roma tomatoes
1 cup sliced red onion
1/2 cup diced dill pickles
Thousand Island dressing

Instructions

Start by adding the chopped lettuce to an extra-large serving bowl. A sturdy bowl will do well here, as we will really be tossing our ingredients together!
Next, sprinkle the beautifully cooked ground beef over the lush green lettuce. The rich flavor of the beef is what brings this salad to life!
Now it’s time to evenly distribute the shredded cheese, diced tomatoes, sliced onion, and diced dill pickles over the top of the ground beef. Just imagine that glorious burst of flavors waiting to come together.
With gentle hands, toss the salad to combine all these delightful ingredients well. You want everyone to enjoy the company of the flavors!
Finally, drizzle as much or as little Thousand Island dressing as your heart desires over the top of the salad. This dressing ties it all together, reminiscent of the sauce found on a classic cheeseburger.
Serve immediately, and be ready to enjoy the wonderful flavors of a cheeseburger in the form of a fresh and delightful salad!
