Butterscotch Bread Pudding: A Rich and Comforting Dessert

Butterscotch Bread Pudding is a warm, indulgent dessert that transforms leftover biscuits into a rich and creamy treat. Infused with the deep caramel-like flavor of butterscotch, this pudding is soft, comforting, and perfect for any occasion. Topped with butterscotch chips and served with a drizzle of sauce or a scoop of ice cream, this dessert is a sweet lover’s dream.

  • Total Time: 55 minutes

Ingredients

Scale

8 leftover biscuits (best if a few days old)
1 packet (28g) butterscotch pudding mix
2 cups whole milk
4 eggs
1/2 cup soft brown sugar
2 tsp vanilla extract
1 cup butterscotch chips

Instructions

Preheat your oven to 350°F and grease an 8×8 baking dish with spray oil. Take those leftover biscuits, break them up, and spread them evenly in the baking dish.
In a large bowl, combine the butterscotch pudding mix, whole milk, eggs, brown sugar, and vanilla extract. Whisk it all together until it’s well mixed. Pour this delightful mixture over the biscuits, making sure each piece is covered. Let this sit for ten minutes, so the biscuits soak up all that goodness; press them down gently if needed.
Now for the fun part! Sprinkle the butterscotch chips over the top of the pudding mixture. Place your baking dish in the preheated oven and bake it for 40 minutes, or until you see it set and turn a lovely golden brown.
Once it’s baked, remove the pudding from the oven and allow it to cool slightly. Serve it warm, topped with a generous drizzle of butterscotch sauce. For those who are feeling extra indulgent, offer a scoop of vanilla ice cream on the side!
