1 tbsp baking powder
1/2 tsp salt
1/2 tsp black pepper
1 cup whole milk
1/4 cup unsalted butter, melted
2 large eggs
1 cup cheddar cheese, shredded
1 cup broccoli florets, blanched and chopped
1/4 cup parmesan cheese, grated

Instructions

Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
In a large bowl, combine flour, baking powder, salt, and pepper.
In another bowl, whisk together milk, melted butter, and eggs until combined.
Pour the wet mixture into the dry ingredients and stir until just mixed; be careful not to over-mix.
Gently fold in the shredded cheddar cheese and chopped broccoli.
Spoon the batter into muffin cups, filling each about three-quarters full, and sprinkle with parmesan cheese on top.
Bake for 20-25 minutes until the muffins are golden brown. You can test them by inserting a toothpick — if it comes out clean, they’re ready!
Let the muffins cool slightly before serving warm.
