Breakfast Grilled Cheese

This Breakfast Grilled Cheese is the ultimate morning comfort food. Stuffed with savory sausage, fluffy scrambled eggs, and melty Colby-Jack cheese between golden, buttery slices of sourdough bread, it’s hearty, flavorful, and easy to make. Perfect for a weekend brunch, meal prep, or a satisfying breakfast on the go!

1/2 pound ground breakfast sausage
6 large eggs, beaten
8 slices Colby-Jack cheese
4 tablespoons soft butter, divided
8 slices sourdough bread

Instructions

In a large non-stick skillet, cook and crumble the ground breakfast sausage until it is no longer pink. Transfer the cooked sausage to a medium bowl lined with paper towels, and set it aside for now. Do wipe out that skillet with a paper towel; we want to keep things tidy!
In that same delightful skillet, melt 2 tablespoons of butter over medium-high heat. Now, pour those beaten eggs into the pan. As the eggs begin to set, gently stir them to make lovely scrambled eggs. Cook them until the liquid is almost gone, then remove the pan from the heat.
Now, let’s bring our sausage back into play. Remove the paper towel from under the sausage, leaving it in the bowl. Add those fluffy scrambled eggs to the bowl with the sausage and give it a gentle stir to mix them up. Wipe out the skillet one last time and heat it up again over medium heat.
Butter one side of each slice of bread. Place one slice of bread in that skillet, butter side down.
Top that bread slice with one slice of Colby-Jack cheese. Then, scoop about 1/2-cup of the sausage-egg mixture right on top of the cheese. Add another slice of cheese on top of that mixture, followed by another slice of buttered bread, butter side facing up.
Cook this lovely sandwich until it turns golden brown, about 3 to 4 minutes. Then, carefully flip it over and let the other side cook until it is golden brown as well.
Once it’s ready, remove the sandwich to a cutting board. If you’d like, you can cut it in half, making it perfect for serving.
Repeat the process with the remaining ingredients to create more delicious sandwiches.
